Nachshon Tzon"e; is the name of a new dairy, producing superb cheese from pure sheep's milk, to the highest standard and quality in Israel. The dairy is situated in kibbutz Nachshon in a pastoral setting in the heart of the Judean plain between the soft hills facing the Latrun Monstray on the one side and the coast on the other, and lying at the foot of the Judean Hills going up to Jerusalem. The dairy is wholly-owned by kibbutz Nachshon. The source of the milk used to make the cheese is from the local sheep flock of the kibbutz, which ensures the product's freshness and quality.<p></P>Their Syrian Cheese, also known as Jibni, is a local Arab cheese. Just slice or chunk and fry in olive oil as you would Halloumi. This Syrian Cheese is fresh and buttery tasting, but not quite as salty as Halloumi.
