Veneto is home to the Prosecco grape, a variety that is used to make white wines in different styles, sparkling or still. This exquisite cheese, also from Veneto, is coated with the Prosecco must (the grape skins that are the by product of the wine making process). The Prosecco gives the cheese intense and delicate scents and a fragrant, fresh flavor. This Ubriaco variety is an ideal cheese to serve with wine - either before, during or after dinner.
