Soft but also firm enough to cut, dotted with pea-sized holes, mild yet a little spicy with a cherry-fruity aroma, W�lder is the pride of the Alma Cheesemaking Company of Vorarlberg, Austria. Think of it as a creamy Appenzeller. If you are unfamiliar with Appenzeller, think of it as a creamy, spicy Gruyere.
