Selected Cheese RecipesComt� Souffl�Ingredients 3/4 pint milk 1 oz butter 1 1/2 teaspoons salt black pepper pinch of cayenne pepper 6 oz unflavored breadcrumbs 4 oz Comt�, shredded 1 clove garlic, crushed with a little salt 4 eggs, separated Directions Place breadcrumbs in a mixing bowl. Set the oven to 375degrees F. Bring the milk to a boil, then stir in the butter, saltand peppers and pour the mixture over the breadcrumbs. Addthe garlic and Comt� and return to the pan. Stir over moderateheat until cheese melts. Beat in the egg yolks. Cool themixture slightly, then stiffly whip the egg whites and fold theminto the mixture. Pour into a buttered pie tin (not more thanthree-quarters full) a bake for about 40 minutes.
