Pairing Beer and Cheese 

Although some people think that cheese and wine are a unique
paring, the beer has been consumed along with cheeses for
centuries. A possible reason for that lies in the fact that both are
fermented and traditionally farmhouse products. We will give you
some suggestions as guide line, but your own preferences can also
guide you in the experience of finding goods pairings between
special cheeses and good beers.
 
For the goat's milk cheese that, as the main characteristic,
has a tart flavor, the good choices for paring will be the IPAs, stout,
porters, American brown ale and all strong bitter beers.
 
For the mild to the medium aged sheep's milk cheese the good
choices will be the amber ale beers, while for the aged sheep's
milk cheese you better get the brown ale beers.
 
For the cow's milk cheese it will be easier if we subdivide in categories:
 
White Triple Crèmes - these cheeses go well with light beers.
 
Soft Cheeses - They can be well paired with ales, pilsners,
pale ales and European lagers.
 
Semi Soft Cheeses - For the mild ones such as Bel Paese or
Havarti you can choose light beers, while for the medium tasting
ones such as Cheddar or Monterey Jack the lagers will be a better choice.
 
Semi Hard Cheeses - For this category we can have a lot of
options of beers such as pilsners, extra bitters, strong ales,
double bocks, IPAs and the dark ones.
 
Hard Cheeses - Due to the strong flavor of these cheeses your
better option will be the strong ales, stout ale, porter and dark beers.
 
Blue Cheeses - As the hard cheeses the blue cheeses have a
strong flavor that also asks for strong ales, stout, porter and dark beers.
